Because the holidays are five months away (UGH!), I want to get a head start on my Christmas body (meaning, I want to be as fit as I can, so I can stuff my face with all the chocolate and marzipan I can and not feel an iota of guilt).
And the first thing I want to tackle is food.
I work at a mall, where food options are plenty but not exactly the healthiest to fill the stomach. My options are deep fried burritos to deep-fried cheese-covered fries. Yum!
Bringing leftovers from the previous night’s dinner for my lunch is an option, but I sometimes find the food to be too heavy that it lulls me into an early food coma.
I recently roamed the aisles of Whole Foods and forgot how vibrant fresh fruit and produce looked. I. Am. Ashamed.
But, alas, I got inspired.
I don’t have a lot of time in the morning to get my lunch in order so keeping it to five ingredients or fewer is ideal.
Seeing the overflow of ripe fruit and luscious avocados, salads and sandwiches were the easiest lunch options for me to come up with. The best part? I can be as creative as I want and I barely need to use the stove.

- Poké bowls
- Fruit salads
- Chicken salad sandwich
- Cold pasta
